Alana’s Gingerbread Bundt Cake with Boozy Mangoes

This delicious Gingerbread Bundt Cake with Boozy Mangoes is the perfect treat for the holiday season. Ingredients: 

For the Gingerbread Bundt Cake: 

  • 190g spelt flour 
  • 190g plain flour 
  • 2 teaspoons mixed spice 
  • 1 1/2 teaspoons baking powder 
  • 1 tablespoon fresh ginger, grated 
  • 125ml milk 
  • 3 eggs 
  • 125g butter, melted 
  • 200g molasses 
  • 150g brown sugar 
  • A little bit of water 

 

For the Boozy Mangoes: 

  • 2/3 cup masala (or dark rum) 
  • 100g brown sugar 
  • Fresh mango slices 

 

For the Gingerbread Bundt Cake: 

 

Prepare the Wet Ingredients: 

  • Melt the butter, molasses, brown sugar, and a little bit of water in a saucepan over medium heat. 
  • Once melted, allow the mixture to cool in the refrigerator. 

 

Mix the Dry Ingredients: 

  • In a large mixing bowl, combine the spelt flour, plain flour, mixed spice, and baking powder. 
  • Add the grated fresh ginger to the flour mixture. 

 

Combine Wet and Dry Ingredients: 

  • Once the melted mixture has cooled, whisk in three eggs and 125ml of milk. 
  • Gradually sprinkle in the dry ingredients, mixing until just combined. 

 

Prepare the Bundt Pan: 

  • Spray a bundt pan with canola oil and dust it lightly with flour to prevent sticking. 
  • Pour the batter into the prepared pan. 

 

Bake the Cake: 

  • Preheat the oven to 160°C (320°F). 
  • Bake the cake for about 1 hour, or until a toothpick inserted into the centre comes out clean. 

 

For the Boozy Mangoes: 

Prepare the Syrup: 

  • In a saucepan, combine the masala (or dark rum) with the brown sugar. 
  • Cook over medium heat until the mixture starts to reduce and becomes slightly syrupy. 

 

Add the Mangoes: 

  • Add the fresh mango slices to the syrup and continue to cook until the syrup thickens further and coats the mangoes. 

 

To Assemble: 

Cool the Cake: 

  • Allow the cake to cool completely in the pan before turning it out onto a serving plate. 

 

Dress the Cake: 

  • Arrange the boozy mango slices over the top of the cake. 
  • Drizzle the remaining syrup over the cake for extra flavour.
