Basque Cheesecake

  • 710g cream cheese
  • 210g sugar
  • 5 eggs, room temperature
  • 490g thickened cream
  • 35g flour

Line the base and sides of a springform tin with greaseproof paper. Beat cream cheese and sugar in a food mixer until smooth and the sugar has dissolved. Add eggs one by one emulsifying well. In a separate bowl combine flour and one-third of the cream till smooth, add next third and mix well before adding the remaining third. Pour cream mixture into cream cheese mixture and beat for 15 seconds. Preheat oven to 240C and bake for 35 minutes. Allow to cool completely in the tin before serving either at room temperature or chilled.
