Ingredients:
- Onion
- Chorizo
- Chicken Thighs
- Olive Oil
- Tomatoes

- Liquid Chicken Stock
- Bomba Rice
- Peas
- Saffron

- Parsley
- Lemon
- Garlic Mayonnaise
Method:
- Dice onions, chicken & chorizo
- Add olive oil to pan, throw in diced onions & cook till browned.
- Add chorizo to pan. Cook to caramelise, then add chicken.
- Start the sofrito sauce. Add tomatoes, garlic and peppers into a blender. Blend until it’s a thick paste.
- Add saffron, paprika, chives and parsley to the sofrito sauce. Blend briefly.
- Add sauce to the rest of the dish and stir.
- Add stock to pan.
- Add Bomba Rice (2 parts stock to 1 part rice) and distribute evenly across pan.
- Leave to sit until the rice has fully-absorbed the stock.
- Once rice is cooked, add peas, peppers and herbs to finish the dish.
- Serve with a lemon slice and garlic mayonnaise.
