Haloumi and Padrón Pepper Gildas (Skewers)


Ingredients

8-10 padrón peppers

1 block Haloumi Cheese

Pickled white anchovies

Green olives

Cornishons

Flat leaf parsley

Lemon

2 tbsp extra virgin olive oil

1 pinch sea salt flakes

 

Method

Over a medium heat, cook your padrón peppers in extra virgin olive oil until they blister, caramelize and soften. Add a pinch of sea salt flakes and take off the heat once cooked.

Cut your halloumi into large chunks and put them into the same pan to fry until golden on the outside. Once done, take off the heat and prepare your other ingredients.

Take your white anchovies lay them out, add your parsley and olive and fold it over to make a little package.

On the skewer, add your anchovy, pepper, haloumi and cornichon.
