Prawn and Broccoli Stir Fry

Don’t overload your wok- keep it simple with this two hero ingredient stir fry!

  • 1 head broccoli
  • 2 tsp cornflour
  • 3 tbs grapeseed oil
  • 6 cloves garlic, roughly chopped
  • 12 large prawns, peeled and deveined
  • 2 tbs sherry
  • 1 tbs oyster sauce
  • ½ tsp sugar
  • 200ml chicken stock
  • Salt
Method

Remove the florets from the broccoli, peel the stalk and cut into thin discs. Plunge into boiling salted water for 1 minute then drain and arrest the cooking in iced water and drain again. Combine the cornflour with 3 tbs of cold water and mix well. Heat a wok over high heat and add the grapeseed oil and garlic. Toss the garlic for a few seconds until fragrant, then add the prawns. Toss the prawns for about 1½ minutes until lightly cooked. Add the broccoli followed by the sherry, oyster sauce, sugar, chicken stock and salt. Bring to a simmer then stir in the cornflour mixture a little at a time until the liquid thickens to a silky sauce. Serve immediately.
