To make the chicken marinade:
Pickled Ginger
2 garlic cloves
5 tablespoons golden syrup or honey
100 ml soy sauce, or amount to taste
Blend.
Line a cooking tray with baking paper.
Place chicken drumsticks in and pour marinade over top.
Bake at 240 degrees for 40 minutes.
Now onto the salad.
Boil water and place soba noodles in pot.
Salad dressing. Into a bowl:
1 cup of buttermilk
1 tablespoon of sesame seed oil
2 tablespoons of miso paste
1 fresh lime squeezed
Whisk to combine. Adjust for taste.
Drain noodles.
Cut a full wombok, bamboo shoots, coriander and combine with noodles and salad dressing.
Drummies should be golden brown. Add to a plate and Enjoy!
