Ingredients: 

For the Pickled Onions: 

– 2 onions, thinly sliced into rounds 

– White wine vinegar 

– White balsamic vinegar 

– 2 teaspoons honey 

– 1/2 teaspoon salt 

 

For the Salad Dressing: 

– 1/4 cup white balsamic vinegar 

– Extra virgin olive oil 

– 1 tablespoon fig jam 

– Salt and pepper to taste 

 

For the Salad: 

– Watermelon, sliced into chunks 

– Strawberries, halved or sliced 

– Pickled onions (from the prepared batch) 

– Fig white balsamic dressing (from the salad dressing) 

 

Prepare the Pickled Onions: 

   – Thinly slice the onions into rounds. 

   – In a jar, combine equal parts white wine vinegar and white balsamic vinegar, honey, and salt. 

   – Add the thinly sliced onions to the jar, ensuring they are fully submerged in the pickling liquid. 

   – Close the jar tightly and let it sit for about 20 minutes to pickle while you prepare the rest of the ingredients. 

 

Prepare the Salad Dressing: 

   – In a small bowl, whisk together the white balsamic vinegar, extra virgin olive oil, fig jam, salt, and pepper until well combined. Set aside.
