Just outside of Roma, 5 hours west of Brisbane, you’ll find an outback oasis among the green grasses and gums. Western Queensland Spirit is a distillery capturing the intangible essence of bush life and bottling it. Ingredients like lemon myrtle, native lime and saltbush add quintessentially country flavours to their unique spirits.
All the botanicals used are sourced locally, either from the grounds themselves or within a stone’s throw of the property. It all started when founders Will Fellowes and Michael McLaughlin blended their love of gin, the country and a spare paddock.
Their Outback Gin is infused with lemon scented gum and Geraldton wax. The Bushrangers Rum features Queensland molasses and ginger. And the citrus cellos burst with bush lemons and oranges. Get a tasting paddle to try all the spirits on offer along with a grazing board featuring Charleville olives, cheeses and cured meats. Western Queensland Spirit also offers gin blending masterclasses. With a small group learn about the history of gin then choose which of 26 botanicals appeal to you to add flavour and get blending!
Your one-of-a-kind gin is labelled, bottled and ready to take home. A nip is left out to be mixed at the bar before you can relax or play lawn games on the grounds and take in a country sunset. A trip to the outback would not be complete without getting into the Western Queensland Spirit!
