We don’t know which sweetie we love more – the decadent cookies from Brooki Bake House, or Brooki herself! Both are simply delightful.
Brooke Saward, aka Brooki, is the beautiful, bubbly baker behind the TikTok-famous Fortitude Valley bakery.
As she describes it, “This is my 42 square metres of pure joy. As you step inside, immediately you see our sweets on display. We have our cupcakes up top, our New York style chunky cookies down the bottom, the hero of the story here at Brooki… and then our macarons and cakes.”
What Brooke doesn’t mention is the incredible aroma of freshly baked treats as you step through the door of her gorgeous Paris-meets-New-York style bakery.
And you’re almost guaranteed to get a warm, freshly baked cookie whenever you come in, as the oven doesn’t stop all day -pumping out warm delights every 15 minutes.
Brooke still can’t believe that her cookies sell out every day.
We suspect it’s thanks, in part, to her more than 1million followers on TikTok and Instagram who are captivated by her day-in-the-life videos. Not to mention the fact that her treats are scrumptious!
Brooke spent 10 years travelling the world as a blogger. She taste-tested the best cookies and baked goods in Paris and New York before perfecting her own recipe.
“While I was travelling, I took a macaron class in Paris, then a gateaux class in the basement of the Ritz Paris – and realized this is something I loved so much. I came back to Australia to put down roots, and I thought, you know what, I’m going to chase my lifelong dream and open a bakery of my own.”
She describes her cookies as a full-flavour experience.
“We often think of food as the flavour but a lot of the memory in our brain (is) the texture of a food. So that’s important for our cookies.
“It’s a soft-centred, crispy experience and when you bite into the cookie, you should have a full flavour profile in that first bite. And then when you reach the centre of the cookie, you get a flavour explosion of a gooey centre – we have Nutella injections, biscoff injections, cream cheese in the red velvet. It’s a whole journey for one single cookie. And that’s important for us… to make sure every cookie has that experience for the customer.”
Brooke loves sharing her baked goods and her passion with visitors. She says she’s “in the business of celebrating”, rather than baking, as her treats are shared during many of life’s special moments.
