Smoked Salt Chocolate Hob-Nobs

Makes 12 biscuits

  • 250g wholemeal self-raising flour
  • 250g quick cook oats
  • 250g brown sugar
  • ½ tsp smoked salt + additional for sprinkling
  • 230g butter, coarsely chopped
  • 2 tbs golden syrup
  • ½ tsp bicarbonate of soda
  • 200g dark chocolate buttons

Method

Preheat oven to 180C and line 2 trays with baking paper. Combine flour, oats, sugar in & sea salt flakes a large bowl and mix well, leaving a well in the centre. Place butter, golden syrup and 1 tbs water in a small pot over low heat until butter melts. Stir in bicarbonate then add to dry mixture and stir together to a dough. Set aside to cool, then roll between 2 sheets of baking paper until 4-5mm thick. Cut out 11cm rounds, re-rolling the dough  scraps) then lay on prepared baking trays. Bake for 12 minutes or until golden.

Allow to cool on trays then carefully transfer to a cooling rack. Meanwhile melt chocolate in a bowl over a saucepan of simmering water, stirring until smooth. Cool briefly, then dip each biscuit in chocolate and sprinkle with a little smoked salt. Place biscuits on wire rack, chocolate-side up, until cool.
