Serves: 4-6 people as a side
Ingredients:
800g mixed tomatoes, roughly chopped
Crunchy chilli oil
Crispy chickpeas
Zest of 1 lemon
Olive oil to drizzle
Salt and pepper
Tahini & Soy Dressing
½ cup tahini
3 tbsp light soy sauce
1 tbsp mirin or maple syrup
1 tbsp rice wine vinegar
1 tbsp water
Method:
Whisk all the ingredients for the dressing together until you get a very smooth dressing (it will seize to begin with, but continue to whisk as it will become smooth).
Spoon the dressing onto a plate and spread it out into a nice circle with a bit of lip so it creates a well to nestle the tomatoes in. Top with the tomatoes, crispy chickpeas and lemon zest. Drizzle over a little olive oil and season with salt and pepper.
