Reef Distillers is an artisanal distillery that is inspired by the Great Barrier Reef. Their premium spirits are created from locally sourced botanicals and ingredients and boast a true ‘paddock to still’ micro distillery experience. The goal of the distillery is to share tastes that remind their guests of family beach holidays and fun times in and around the ocean. Currently they have signature gins and vodkas ranging from the Coral Sea Gin inspired by the reef’s pink manta ray to the Pacific Ocean Vodka which has been meticulously distilled to capture the crystal clear purity of the Pacific Ocean. The standout would be the uniquely handcrafted Capricorn Rosella Vodka. A stunning deep red in appearance, it’s a blend of sweet, fresh, and tart flavours thanks to the natural infusion of Rosella flowers.

Reef Distillers are not only about great tastes but good practices. Sustainability is at the core of what they do with all ingredients sourced from pesticide-free farms which leads to less toxic runoff into local waterways and eventually the oceans. The Rosella flowers are hand-picked from a nearby permaculture farm.

That permaculture farm is High Valley Dawn. This breathtaking farm in the hills surrounding Rosslyn Bay offers tasty, fresh organic produce which they supply to local businesses and their own nearby restaurant, Beaches. High Valley Dawn also adheres to the ethics of permaculture or permanent agriculture. This includes:

Fair Share – sharing your surplus and your knowledge.

Farm tours are offered so guests can discover more about permaculture and the ways this amazing project is operating sustainably. The location is so beautiful that the many volunteers the farm takes on never want to leave. Guests can now bask in the beauty a little longer with a farm stay in one of the many on-site tiny homes. This accommodation gives spectacular views of the farm along with luxury while adhering to the ways of permaculture.
