Watermelon Pizza


  • 250g Greek yoghurt 
  • 125g mascarpone 
  • 1 tsp honey 
  • 1 tsp vanilla 
  • 1 small seedless watermelon  


Combine Greek yogurt, mascarpone, honey and vanilla to a small bowl, whisking until smooth and combined. Carefully cut three 4cm thick slices from the centre of watermelon, then cut two slices into 6 wedges. Remove the rind and skin from the remaining slice. Cube and use as a topping. To assemble, spread some of the yogurt mixture on top of the watermelon slice. Leave a little of the pink near the rind showing. Then add toppings. I used:  

  • Blackberry + blueberries + elderflower 
  • Strawberries + raspberries + lemon verbena 
  • Dragon fruit + marigold 
  • Watermelon + basil flowers 
  • Kiwi fruit + green grapes + mint 
  • Plum + bronze fennel
