Chicken + Chorizo Paella


Ingredients:

  • Onion
  • Chorizo
  • Chicken Thighs
  • Olive Oil
  • Tomatoes
  • Garlic
  • Peppers
  • Liquid Chicken Stock
  • Bomba Rice
  • Peas
  • Saffron
  • Parika
  • Chives
  • Parsley
  • Lemon
  • Garlic Mayonnaise

Method:

  1. Dice onions, chicken & chorizo
  2. Add olive oil to pan, throw in diced onions & cook till browned.
  3. Add chorizo to pan. Cook to caramelise, then add chicken.
  4. Start the sofrito sauce. Add tomatoes, garlic and peppers into a blender. Blend until it’s a thick paste.
  5. Add saffron, paprika, chives and parsley to the sofrito sauce. Blend briefly.
  6. Add sauce to the rest of the dish and stir.
  7. Add stock to pan.
  8. Add Bomba Rice (2 parts stock to 1 part rice) and distribute evenly across pan.
  9. Leave to sit until the rice has fully-absorbed the stock.
  10. Once rice is cooked, add peas, peppers and herbs to finish the dish.
  11. Serve with a lemon slice and garlic mayonnaise.
