Fritters and Pies with leftover Spaghetti Bolognese

So, let’s roll up our sleeves and get ready to bake up some culinary magic! 

Ingredients: 

Bolognese sauce
Spaghetti
Parsley
Basil
Parmesan cheese
Smokey cheese
Short crust pastry (bass)
Puff pastry (lid)
Eggs
Dry mixed herbs 

Method: 

  1. Chop fresh parsley and basil finely and mix well into the Bolognese sauce   
  1. Grate cheese and pop it to the side 
  1. Use a large cookie cutter to cut 12 short crust pastry slices.   
  1. Spray a muffin tray with canola spray and place pastry into the tray. Push the pastry down to mold around the tray. 
  1. Use a couple of spoons to fill the pastry shells. Fill them just below pastry level and then top with a little bit of cheese. 
  1. Use a slightly smaller cookie cutter to cut the puff pastry for the lids. 
  1. Use a little bit of water to stick the puff pastry to the base. Crimp the edges of the pastry down with your fingers and then a fork. 
  1. Place some egg wash on top of each pie and sprinkle some mixed herbs on top. 
  1. Put into the oven at 200 fan forced for 30 minutes, until they are golden and crispy. 

 

Fritters 

Ingredients:
Spaghetti (120g)
Prosciutto
Parsley
Basil
Mixed herbs
Salt
Pepper
Parmesan cheese
flour
Eggs
Panko crumbs 

Method: 

  1. Finely chop prosciutto, parsley and basil and place into bowl with spaghetti 
  1. Sprinkle in some mixed herbs, salt and pepper  
  1. Grate a generous amount of cheese and add to the bowl 
  1. Add a couple of tablespoons of flour, just enough to hold the mixture together 
  1. Add 3-4 eggs, depending how bound together it is 
  1. Gently mix it all together with a fork 
  1. Add 2 tablespoons of panko crumbs and roll it through gently 
  1. And some oil into the pan then twist the pasta with your fork into a nest and place into pan to fry. Flip and do the other side of the fritter|
